Paul Robinson met Joe Gilbert in 1961. Two men together had successfully opened a number of restaurants including Plaza III Steakhouse. They were looking to expand Plaza III Steakhouse into the space being vacated by neighbor men’s clothing store Tom Houlihan’s. But instead of expanding they decided to open a new casual restaurant.
During construction of the restaurant they could not come up with the name of the restaurant and people kept referring it to Tom Houlihan’s place. As a result, they decided to name it as Houlihan’s Old Place. They gained the permission of Tom Houlihan’s to use the name and they offered him a lifetime reservation at the center of the dining room for every day. The table included the name of Tom Houlihan’s on a brass plaque. But Tom Houlihan’s never visited the restaurant.
After the success, they quickly decided on nationwide expansion. By 2012, Houlihan’s Restaurants, Inc. owned 31 Houlihan’s restaurants and 48 franchised locations.
Now there are now 84 restaurants in 18 states.
